As the popularity of hot peppers has grown, so has my desire to use them in a recipe. I chose the Trinidad Scorpion as the lead pepper in CARIBBEAN STING. CS is the sauce that has people coughing, hiccuping and sweating bullets. Despite the great heat, it has a fruitful flavor with a Caribbean feel.
